Pilchard Croquettes

Ingredients: For the croquettes
2 tins Lucky Star Pilchards, drained
1 egg
50g bread crumbs
100g mashed potato
50g parmesan cheese
Salt and pepper to taste

For the Crumbing
100g bread crumbs
100g flour
4 eggs

Method:
1. For the croquettes
2. Decant the drained pilchards into a bowl
3. Break the fish apart slightly
4. Add the bread crumbs and the eggs and mix together thoroughly
5. Add the mashed potatoes and parmesan and roll into balls
6. For the crumbing
7. Have your flour, egg and bread crumbs ready in that order from left to right in three separate containers
8. Roll the balls one by one in the flour, then the egg and then the bread crumbs
9. The egg and bread crumbs can be repeated
10. Deep fry at 180°C until golden brown
11. Serve with fresh lemon or a dip of your choice
