Warm Potato Salad

Warm Potato SaladServes: 2 | Preparation Time: 60 minutes
2 Mondial potatoes (large / medium)
20ml Butter
100g Streaky bacon, chopped
1 Clove garlic, crushed
5ml Fresh rosemary, finely chopped
½ Onion, finely chopped
20ml O live oil
20ml Lemon juice
10 ml Apple cider vinegar
10ml Mixed fresh herbs, finely chopped
Salt and pepper to taste

• Place potatoes in a large saucepan with cold water, cover and bring to the boil. Reduce the heat slightly and cook potatoes until soft. Allow to cool
• Peel potatoes and cut into 1cm cubes
• Over medium heat, in a large frying pan, sauté bacon in butter until crispy. Remove bacon from the pan and add garlic, rosemary and onions to the remaining butter and bacon fat.
• Sauté until soft. Season to taste
• Add potatoes and sauté until lightly brown in colour. Add crispy bacon and remove from heat
• For the dressing, combine all ingredients and mix well. Season to taste
• Serve potato salad warm and drizzle with dressing
